I love Indian food I never get tired of it, the perfect meal if you were out the night before. Easy to make in advance on a Saturday afternoon. You can feed the kids then pop it in the fridge for a snack when you’ve got back in from a boozy night out. This is kid friendly curry and can be made as mild as you want and ramp up the spice at the last minute if you like an extra kick in your curry.
- 500g lean mince beef
- 1 teaspoon of olive oil
- 1 beef Oxo cube
- Tomato passata 500 mls
- 1 onion chopped
- 10-15 mushrooms quartered
- half a cup of frozen garden pees
- generous pinch of salt
- 1 desert spoon of Patak’s Madras curry paste (Patak’s can be bought in most supermarkets)
- Sharwoods Mango Chutney
Add in any extra veg you like such as broccoli red/green peppers or carrots
Fry mince and chopped onion add in the Oxo cube
Once the beef is no longer pink add in the mushrooms pees and salt
Pour in the passata and mix in the paste use less if its for the kids then add more if required.
Lower the heat to medium
Stir in at least 1-2 desert spoons of Mango Chutney
Why not serve with a few naan breads heated in the oven or my perfect rice (18th Jan post )
